Rick Blacklock's Turkey and Dressing Recipe

message from Rick:  Blended families bring with them different holiday traditions.  
When Irene and I got married, we split Thanksgiving and Christmas, until I came up
with this recipe. It was so moist and tender that I got to do both holidays from then
on (whomever cooks in our house, doesn't clean up).  Here are my recipes, hope you
enjoy!
Turkey and Dressing Recipe

Potato Chowder

Ingredients:
8 cups peeled and diced potatoes
1/3 cup chopped onion
3 cans (14.5 oz) chicken broth
1 can (10.75 oz) condensed
Cream of Chicken soup
1/4 teaspoon pepper
1 package (8 oz) cream cheese, cubed
1 pound bacon, diced, cooked and drained

Procedure:
In a large pot combine the first five ingredients
Cover and cook on medium-low heat until potatoes are tender
Turn heat to low
Add cream cheese and bacon
Stir until cream cheese is blended
Garnish with chives

Curried Pumpkin Soup
An Australian favorite.

Ingredients:
1 tablespoon vegatable oil
2 medium onions, chopped
2 cloves garlic, chopped
3 teaspoons Indian curry powder
2 pounds of pumpkin (or any winter squash)
4 cups chicken stock
Salt/pepper to taste

Procedure:
Heat the oil in a large saucepan, then stir in the onions and garlic and fry over medium
heat until they are soft.  Stir in the curry, and keep stirring for about a minute.  Pour in
the stock, add the pumpkin, and bring to a boil. Reduce heat to low, cover, and let
cook until the pumpkin is very tender (about 15-20 min). Puree in a blender, solids
first, return to the pan, and season to taste.

Flank Steak Marinade

Ingredients:
¼ cup soy sauce
2 tblsp vinegar or lemon juice
1 tsp garlic salt
1 1/2 lbs flank steak
3 tblsp honey or brown sugar
1 tsp ginger
½ tsp seasoning salt
1 or 2 green onions chopped

Procedure:
Combine all and marinate 8 hrs and barbeque

Chile Rellenos

Ingredients:
2 (4oz) cans green chilies chopped
½ lb sharp Cheddar cheese
2 eggs
1 cup milk
½ c. flour
1 tsp. salt

Procedure:
Preheat oven to 350 F. Butter 9x9 baking pan. Cut cheese in long
fingers. Make batter by mixing eggs, milk, flour and salt. Pour
over chili and cheese. Bake for 45 to 50 minutes. Serves 4.

Almond Butter Cake w/Crunchy Almond Topping

Ingredients:
1 1/2 cups sugar
3/4 cup (1 1/2 stick) melted butter
2 eggs
2 teaspoons almond extract
1 1/2 cups all purpose flour
sliced almonds for topping

Procedure:
Stir sugar and melted butter in large bowl - stir in egs and almond extract.  Stir in flour.
 Pour into greased 8x8x8 pan.  Top with almonds and sprinkle with sugar.  Bake at
350 degrees for 40 mins until golden.  Cake will not test clean with toothpick...
